Autumn No Bake Bites



  • 1 cup Craisins or dates
  • ¼ cup sliced almonds
  • ½ cup honey
  • ¼ cup pumpkin puree
  • 1 Tablespoon flax seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 cup oats (dry, not cooked)
  • ½ cup coconut flakes
  • 1 cup pumpkin seeds

Mix all ingredients in a large bowl, and stir until evenly combined. Cover and refrigerate for at least 30 minutes.  The colder they get the easier they will be to shape so you can even put the mixture in the freezer.  Once the mixture is cold, use your hands press tightly to shape it into desired size balls.  Store covered in the refrigerator to keep their shape.
