Avocado Chickpea Salad



This avocado chickpea salad is a great way to add new flavors and textures to your everyday lunch. Prep time is less than 10 minutes and the avocado won't brown due to the lime juice! My favorite way to enjoy the avocado chickpea salad is on top of a whole wheat pita with greens and a drizzle of hot sauce! It's also a great new take on the popular avocado toast! 



Serves 2

  • 1 cup chickpeas
  • 1/2 large avocado
  • 1 Tbsp plain Greek yogurt
  • 1 tsp fresh lime juice
  • 1 Tbsp yellow onion, diced
  • 1 Tbsp cilantro, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Hot sauce (optional)


In a bowl, smash together the chickpeas and avocado with the back of a fork until desired texture. Mix in remaining ingredients. Taste and add more garlic or lime if needed. Make into a wrap, sandwich, or top a pita or greens.
