Black Bean Pumpkin Burgers

These delicious and protein packed veggie burgers are perfect for fall and take less than 20 minutes to prep and cook. Make a traditional hamburger or use to top a salad. Whether it's a quick lunch or simple meatless dinner, these black bean pumpkin burgers should be on your menu this week!

 

Ingredients

makes 4 patties

  • 3/4 cup pumpkin puree
  • 15 oz can black beans, drained and rinsed
  • 1 cup oats
  • 2 Tbs olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tsp garlic powder
  • 1 tsp curry powder
  • red pepper flakes to taste
  • Salt and pepper to taste
  • Hot sauce (optional)

 

Smash beans with the back of a fork in a large bowl. Add in remaining ingredients and mash together until moist. Form 4 patties. Heat 1 Tbsp olive oil in a large skillet over medium high heat. The patties will stay together better if the pan is hot enough. Cook the burgers on each side for about 3-4 minutes or until crispy. Center will still be soft.
