Dark Chocolate Chip Pumpkin Bread
I will never get too much pumpkin bread. It is always the first thing I want to make in the fall. There are so many delicious variations but I keep mine simple using ingredients like a whole grain flour, applesauce and dark chocolate chips. My favorite way to eat this bread is right when it comes out of the oven and the center is still warm and gooey!
- 7 1/2 oz. canned pumpkin
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/3 cup water
- 1 cup light brown sugar
- 1 1/2 cups flour of choice (all-purpose, whole wheat, oat, etc)
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1 cup dark chocolate chips (add as much or little as you wish)
Preheat oven to 350 degrees and prepare a 9×5 loaf pan. In a large bowl, mix pumpkin puree, eggs, applesauce, water, and sugar. In another bowl, sift together the flour, baking soda, and spices. Evenly mix dry ingredients. Mix into the wet ingredients. Don't over mix. Fold in chocolate chips. Pour batter into pan. Bake until a knife in the center comes out almost clean, or about 50 minutes. Let sit in pan for 10 minutes to cool.
