This recipe pairs two of my favorites, edamame and guacamole! It takes traditional guacamole and boosts it with extra protein and nutrients. I promise this will be the easiest dip you ever make. It involves throwing everything in a food processor. So get a cheese board going, chill some wine, make this dip, and have the girls over.
- 8 oz package frozen shelled edamame, thawed
- 1 medium avocado, halved and pit removed
- ¼ cup red onion
- 1 Tbsp lemon juice
- 1 tsp lemon zest
- 2 Garlic cloves
- 1 tsp chili powder
- 1 tsp olive oil
- Fresh cilantro
- Salt and black pepper to taste
In a food processor combine all ingredients and process until nearly smooth. Serve with fresh chopped tomato and fresh squeezed lime or with pita chips!
