Halibut and Curried Veggies




serves 2-3

  • ~1 lb halibut
  • 1 sweet potato, cut into 1 inch cubes
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 tsp Worcestershire sauce
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/2 tsp curry powder
  • sprinkle of cayenne
  • salt and pepper to taste


Pre-heat oven to 400. Drizzle olive oil in the bottom of a square baking dish. Place halibut in the dish and drizzle with olive oil. Sprinkle with salt and pepper. Bake for 15-20 minutes or until food thermometer inserted in the center of the fillet reads 145 degrees.

While fish is baking heat olive oil in a large pan over medium heat. Saute sweet potato for about 5 minutes. Add in the bell pepper and zucchini and saute for another 10 minutes. Add in all the seasonings and stir well. You can drizzle a little more olive oil in to help the seasoning coat the veggies. Continue to cook, stirring occasionally until veggies are all soft. They should be done around the same time as the fish!
