Harvest Chicken Salad




serves 3 (makes ~3 cups)

  • 1 large chicken breast, baked, cooled, and chopped
  • ¾ cup plain Greek yogurt 
  • 2 Tbsp spicy brown mustard
  • 1/2 lemon, juice
  • 1/4 tsp dried dill weed
  • ¼ cup red onion, diced
  • 2 hard cooked eggs, chopped
  • 1/2 cup apple, cut into chunks (I used a Jazz apple, which can be large so you may not need the whole apple)
  • Heaping handful dried cranberries
  • Heaping handful sliced almonds
  • seasonings to add to taste: garlic powder, lemon pepper, Mediterranean seasoning mix


Chop and mix all ingredients together. Chill before serving.
