Quinoa Casserole with Pesto Chicken



Healthy and easy chicken recipes are great to have on hand. This quinoa casserole with pesto chicken recipe is popular and easy to love. This is a complete meal in 1 dish and makes ground chicken look fancy! Ground turkey, beef or tofu crumbles are great substitutions for the chicken. The casserole can also be served as a side, making it perfect to take to upcoming holiday festivities!



Serves 4-5

  • 1-2 Tbsp olive oil
  • 1 lb ground chicken
  • 12 oz broccoli
  • 2 1/2 cups cooked quinoa
  • 8 oz jar pesto
  • 7 oz mozzarella cheese
  • 1/3 cup parmesan cheese
  • Salt & pepper to taste


Pre-heat oven to 400 degrees. Make quinoa ahead of time and measure out 2 1/2 cups once cooked for the casserole. Sauté ground chicken in a large pan with olive oil until cooked through. Season with salt and pepper. Microwave broccoli in a large bowl for 4 minutes to soften. Add the prepared quinoa, pesto, and warm broccoli to the cooked chicken and mix well. Stir in cheese, reserving some to sprinkle on top of the casserole. Scoop mixture into a 9x13 dish and top with extra cheese. Bake for 10 minutes or until cheese is melted on top.
