Gnocchi with Ground Turkey & Zucchini


This one pan meal is full of spring flavors! For my favorite way to cook this gnocchi with ground turkey and zucchini recipe, add an extra squeeze of lemon to bring even more sunshine to the dish. Ground turkey, zucchini, peas and fluffy gnocchi create balance while the lemon, spices, and goat cheese bring the flavor. From start to finish, this healthy dinner recipe is on the table in under 30 minutes.



Serves 4

  • 18oz package gnocchi
  • 3-4 oz goat cheese
  • Zest from 1 lemon
  • Salt & pepper
  • Garlic powder
  • Red pepper flakes
  • 1-2 Tbsp olive oil
  • 1 lb ground turkey or chicken
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups zucchini, cubed
  • 2 cups frozen peas


Heat olive oil in a large cast iron skillet over medium heat. Brown the ground turkey until it is no longer pink. Add the onion and cook for 2-3 minutes. Next add the minced garlic, zucchini, and frozen peas. You may need to drizzle more olive oil to coat the pan. Cook for 3-4 minutes and add the gnocchi to the pan. Zest the lemon over the pan. Cut the lemon in half and squeeze desired amount of juice from one half. Season with salt, pepper, garlic powder and red pepper flakes to taste. Last add the goat cheese in chunks and mix to incorporate while it melts.
