Tortilla Crusted Quiche

Making a quiche recipe is one of my favorite ways to brunch, so I created this quick and simple recipe. This healthy quiche is filled with sautéed vegetables and parmesan cheese! Get as creative as you want by substituting other vegetables for the filling. I loving serving mine with fresh salsa!
Ingredients
Serves 1
- 1 large tortilla
- 2 eggs
- 1/3 cup plain Greek yogurt
- 1 garlic clove, minced
- 2 Tbsp red onion, chopped
- handful of spinach, chopped
- 6-8 cherry tomatoes, quartered
- 1/4 or more sweet potato, cubed
- Fresh grated parmesan cheese
- Salt and pepper
Pre-heat the oven to 375 degrees. Spray the bottom of a single ramekin. Place your tortilla in the bottom of the ramekin, letting the tortilla cover the sides. Sauté the sweet potato in olive oil over medium heat for 5 minutes. Add the rest of the vegetables and continue cooking until soft, another 4-5 minutes. Spoon the cooked vegetables into the tortilla, should fill it 2/3 full. In a separate bowl whisk eggs, yogurt, cheese, salt and pepper. Pour egg mixture over vegetables and sprinkle with cheese. Bake for about 15 minutes or until egg is set.
