As requested, here is the recipe for my homemade version of Larabars! If you bought the ingredients to make the granola from the previous post, then you should have everything you need for these! They are packed with nutrients and take very little effort to prepare. They store well so you can enjoy them all week! I added the optional chocolate chips to mine, but they certainly can be left out.
- 1⅓ cup hazelnuts
- 13 pitted dates
- 2 Tbsp smooth peanut butter
- ⅓ cup dried cranberries
- ½ tsp vanilla
- ½ tsp cinnamon
- ⅓ cup dark chocolate chips (optional)
In the food processor blend all ingredients together on high until finely chopped. Dough should be moist and able to press together. Press dough into about half of a 9x13 glass baking dish or in a square brownie pan. When pressing the dough into a pan, decide how thick you want your bars to be. This will determine the size of the pan you use. Place dough in the freezer for 30 minutes to harden. Cut into bars and store in Tupperware or plastic snack bags. I stored mine in the refrigerator until I was ready to eat them to keep them fresh.
