Honey Fig Newton Bars




  • 2 cups all purpose flour
  • 2 eggs
  • 1/3 cup + 2 Tbsp applesauce
  • 1/3 cup honey
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 Tbsp milk
  • 16 oz jar fig preserves


In a large bowl mix all the ingredients except the fig preserves together. Do not over mix. Place bowl of dough in the fridge for at least an hour. In the meantime preheat oven to 350. Prepare a 7 x 11 casserole dish by spraying non-stick spray in the bottom and sides. Poor half the dough into the bottom and spread evenly. Next poor the entire jar of fig preserves on top and spread. Lastly, spread the remaining dough on top. This creates a fig preserve center. Bake for about 15 minutes, until the sides begin to turn golden brown. Let cool before slicing into bars!
