Lettuce Wraps and Fresh Spring Rolls


For the rolls you will need:

  • rice paper (spring roll skin)
  • fresh mint
  • fresh basil
  • fresh shrimp
  • 1/3 package of bean thread noodles
  • desired amount of spicy Thai chili sauce

Cook shrimp in a little olive oil in a skillet until opaque. Chop the fresh herbs and mix with cooked shrimp and sauce. Cook the bean thread noodles according to package. They should only take about a minute. Lastly, get a clean cutting board and set all your ingredients up to roll. Wet the rice paper one at a time as you roll. Fill each wet paper with shrimp mix and tuck in the ends and roll up tightly.


For the lettuce wraps:

  • 1 lb ground turkey
  • 2 green bell peppers, chopped
  • 1/2 a package of pre-chopped fresh broccoli coleslaw
  • low sodium soy sauce
  • spicy Thai chili sauce
  • Kraft Asian Toasted Sesame Anything dressing
  • fresh cilantro, chopped

Brown the ground turkey. Once no longer pink, throw in the vegetables and desired amount of Asian sauces. Mix well and simmer for 10-15 minutes or until bell peppers are soft. Add chopped cilantro and serve in either romaine or iceberg lettuce leaves.
