Pesto Potato Salad




  • 2 lbs red potatoes cut into 1” chunks
  • ½ cup plain Greek yogurt
  • ⅓cup store-bought or homemade pesto
  • Juice and zest of 1 lemon
  • ¼ cup diced red onion
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish


Boil potatoes in water until just tender. Drain and set aside to completely cool. In the meantime, whisk the Greek yogurt, pesto, lemon juice, and zest together in a small bowl. Taste and season with salt and pepper. Pour over the potatoes, add the red onion, and mix. Garnish salad with fresh parsley or basil.
