Pineapple Fried Rice

Healthy and better than take out!

 

Ingredients

Serves 4

  • 1 Tbsp rice vinegar
  • 1/2 tsp ginger powder
  • 1 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Sriracha and lime for serving
  • Fresh cilantro
  • 3 cups cooked brown rice
  • 2 cups diced pineapple
  • 10 oz bag frozen peas and carrots
  • 10 oz bag frozen broccoli
  • 4 eggs
  • 3 green onions, sliced
  • 4 Tbsp low sodium soy sauce

 

Cook rice according to package. In a large skillet heat 2 Tbsp olive oil over medium heat. Add frozen vegetables and saute until cooked through. When the rice is done add it to the skillet. Add in the pineapple, green onions, soy sauce, rice vinegar, and seasonings. Stir well and cook for about 10 minutes. Meanwhile, either fry or scramble the eggs. Toss scrambled eggs into the fried rice. Serve with fresh lime wedges, cilantro and Sriracha for extra spice.
