Pulled Pork Zucchini Boats

I love creating zucchini recipes, and this pulled pork zucchini boat is simply delicious! With cheese, radishes, cilantro, and salsa, this zucchini boat is filled with flavors and textures. A great healthy dinner recipe that's easy to share. 

For the boats

  • 2 large zucchini, halved and center spooned out
  • cheddar jack cheese
  • radishes, sliced
  • cilantro
  • salsa
  • salt and pepper

For the pork

  • 2 lb pork loin
  • 1/2 cup chicken broth
  • 1 cup BBQ sauce
  • 1/4 cup red wine vinegar
  • 2 Tbsp chili powder
  • 4 cloves garlic, minced
  • 1 Tbsp dijon mustard
  • 1/4 cup brown sugar

 

    Place all ingredients for the pork in a crockpot on high for 3.5-4 hours or until pork pulls apart easily with a fork. Pre-heat the oven to 400 degrees. Place hollowed out zucchini halves in a 9x13 baking dish and drizzle with olive oil. Rub the olive oil to coat the zucchini and season with salt and pepper. Bake zucchini for 15-20 minutes or until tender. Fill each half with pulled pork and cheese. Bake for 3-4 more minutes until cheese is melted. Removed from the oven and top with fresh salsa, radishes and cilantro.
