Sweet and Tangy Summer Slaw

Ingredients

  • 1- 12oz bag of raw traditional or broccoli slaw
  • 1 ½ granny smith apples
  • 1 lemon
  • 4 Tbsp olive oil
  • 3 Tbsp apple cider vinegar
  • 1 ½ Tbsp spicy brown mustard
  • Fresh ground black pepper
  • Poppy seeds (optional garnish)

 

In a small bowl whisk the juice from ½ the lemon, olive oil, apple cider vinegar, spicy brown mustard and fresh ground black pepper. It is a good idea to taste your marinade at this point and add more vinegar, mustard, or pepper to taste.

Julienne the granny smith apple and mix with the dry slaw in a large bowl. Pour the marinade over the slaw and mix until well incorporated. Give the slaw a few more turns of the pepper grinder and place covered in the refrigerator. Let the slaw marinate for 1 to 2 hours before serving with food. This really gives the slaw a chance to absorb all those flavors and tenderize the raw vegetables. Serve with BBQ, on top of burgers, on top of tacos, or like I did below!
