Sweet Potato Wedge Nachos

- 1 large sweet potato
- 1/3 cup canned black beans, drained and rinsed
- 1/2 green bell pepper, diced
- 1 jalapeno, sliced
- Pepper jack or cheddar cheese
- 2 radishes, sliced
- Garlic powder
- Salt and pepper
- Guacamole, cilantro, salsa
Pre-heat oven to 400 degrees. Heat olive oil over medium-high heat in a cast iron skillet. Slice sweet potato into wedges and add to the skillet. Sear on each size of the potato wedge for 2-4 minutes. Place hot skillet into the oven and let the wedges bake, flipping occasionally. Cook until wedges are soft through the middle when poked with a fork, about 10-12 minutes. While the wedges are cooking heat olive oil in a small pan on the stove. Add the beans, bell pepper and jalapeno. Season with garlic powder, cumin, salt, and pepper. Sauté for about 4-5 minutes. When the wedges are done, carefully pull the cast iron skillet from the oven. Arrange wedges in the middle of the pan and top with the beans, peppers and cheese. Place the skillet back in the oven for 1-2 minutes or until cheese is bubbly. Top nachos with radish slices, guacamole, cilantro, salsa and serve!
